Start by melting the Butter in a large pan
Continue in low heat
Add the dried Fruit, in any order
Add the Zest of lemon and Zest of Orange
Add the Lemon Juice
Place into a Cup the juice of the orange and complete with water to make 250ml (which is one cup all together)
Add the Orange juice mixed with water into the pan with the fried fruit
Add also the Cinnamon powder, nutmeg and mixed spice
Mix well all the ingredients and increase the heat to medium
Leave to simmer for 1 minute with the lid on
Once the flavours and all integrated transfer the mix to a large pan to cool down
While the fruit is cooling down, place in a bowl the flour
Incorporate the Bicarbonate of Soda and mix them well
When the fruit is completely chilled, then add the 2 eggs to the fruit and make sure all the ingredients are well integrated and mixed
Following add the flour mixed with the bicarbonate of soda, in 3-4 parts or as you feel comfortable
Mix very well all the ingredients together, I find that using a wooden spoon is better
Prepare a lined mold with baking paper or greased
Pour the mix of the cake and make the surface is spread evenly
Take to a preheated oven at 180 Celsius and leave for 1 hour and 15 minutes, or until you insert a toothpick, and this come out clean
Leave it to cool ready to enjoy.
